This Reserva Sherry Vinegar is a gourmet wine vinegar which is matured in oak barrels for 2 years, using 20 year old Sherry as the starting agent. The Sherry is made using the Sollera system, which is a technique based on the principals of fractional blending; meaning that the Sherry contains dillutions of older Sherries aged for 100 years or more. It has an acidity level of 8%.
Our Reserva Sherry Vinegar has a beautiful mahogany colour, a well-rounded flavour and a smooth finish, with rich woody aromas. Use in dressings and cooking for a slightly sweet aged-wine flavour, and an exciting alternative to Balsamic vinegar.
