This is when ageing in oak casks a maximum of a third of the sherry can be siphoned from the oldest barrel at the bottom of the pile. This in turn is replaced from the younger barrel above and so on skywards. This keeps the original “Mother” of the system in place to make even more beautiful Sherry Vinegar Babies!
