Vinagre de Jerez is a vinegar obtained from the acetous fermentation of wines from Palomino, Pedro Ximénez or Jiménez and Muscatel grape varieties produced in the provinces of Cádiz, Lebrija and Seville. This vinegar is also known as sherry vinegar and is used in cuisine all around the world, especially in France. It is used to flavor the variety of stews, sauces, casseroles and salad dressings.
