An excellent substitute for lemon or vinegar and it is great to use by sprinkling on salads, kebabs, fish or chicken and even bread. It can be mixed into marinades and encrusts lamb chops. Sumac is one of the main components in the spice mix za’atar, and is used as a topping on fattoush salad, and makes a nice topping on dips like hummus.
Sumac is definitely the secret ingredient in endless Middle Eastern mezze, salads, rice dishes and stews.
